Banana Bread


°375 ml (1 1/2 cups) unbleached all-purpose flour
°180 ml (3/4 cup) oat flour
°30 ml (2 tbsp.) wheat bran
°5 ml (1 tsp) baking powder
°5 ml (1 tsp) baking soda
°500 ml (2 cups) very ripe bananas, mashed with a fork (about 5 bananas)
°125 ml  lightly pack brown sugar
°60 ml (1/4 cup) 0% plain yogurt
°45 ml (3 tbsp.) canola oil
°2 eggs


Put the grill at the center of the oven. Preheat oven 180°C (350°F). Butter a 25 x 10 cm (10 x 4 in) loaf pan with a capacity of 1.5 L (6 cups) and line it with strip parchment paper, letting it hang on 2 sides.
In a bowl, combine the flours, wheat bran, baking powder and baking soda. To book.
In another bowl, mix the rest of the ingredients with an electric mixer until the preparation is homogeneous.
On low speed, stir in dry ingredients until mixture is just moistened. Spread the mixture into the mold.
Bake for about 1 hour and 10 minutes or until a toothpick inserted in the center of the bread comes out clean.
Let cool for 10 minutes on a wire rack before unmolding.
