°40 g panko breadcrumbs
°60 ml milk
°675 g (1 1/2 lb) medium-lean ground beef
°2 eggs, beaten
°7.5 ml (1 1/2 tsp.) smoked sweet paprika
°5 ml (1 tsp) cracked black pepper
°30 ml (2 tbsp.) butter
°2 onions, minced
°30 ml (2 tbsp.) cider vinegar
°500 ml (2 cups) beef broth
°30 ml (2 tbsp.) dark toasted flour
°15 ml (1 tbsp.
°15 ml (1 tbsp.) mustard


In a large bowl, combine breadcrumbs and milk. Leave to soak for 2 minutes. Add the meat, eggs, paprika and half the pepper. Salt. With your hands, mix until the preparation is homogeneous, then shape 8 patties.
In a large skillet over medium-high heat, brown half the patties at a time in the butter, 6 to 8 minutes. Salt and pepper. Reserve on a plate.
In the same skillet over medium heat, brown the onions for 5 minutes in the hot fat. Deglaze with the vinegar. Reduce almost dry. While whisking, add broth, toasted flour, Worcestershire sauce and remaining pepper. Bring to a boil and simmer over medium heat until sauce thickens, stirring occasionally. Remove from the heat, then stir in the mustard. Return the meat to the skillet and continue cooking for 2 minutes or until the meat is cooked. Adjust seasoning.
Serve the hamburger steaks with the sauce and steamed potatoes or mashed potatoes, if desired.
