Farmer's Casserole

*You will need:

°6 cups of potatoes, cut into cubes.
°1 tablespoon of extra virgin olive oil.
°1 1/2 cups of reduced-fat Colby or Monterey cheese, shredded.
°6 slice diced bacon.
°2 green onion cut to slices.
°24 ounces (2 cans) fat-free evaporated milk.
°2 cups substitute egg beater.
°Half a teaspoon of salt.
°Half a tsp black pepper.

*How making :

In a non-stick skillet, heat the oil over medium heat and cook the potatoes until lightly browned.
Put the potatoes in the casserole. Topped with ham, cheese and green onions.
Mix the egg whisk, evaporated milk, salt, and pepper in a large bowl until well combined. & pour on potato mixture.
In a preheated 375 degree oven, bake for 45 to 55 minutes.
Leave before slicing into 15 equal portions.
