* What you will need:

°2 pounds boiled potatoes - cut into 1-inch pieces (such as red, white, round, or new skin)
°3 teaspoons olive oil
°5-6 garlic cloves, unpeeled
°1 teaspoon lemon juice
° 1 tablespoon chopped green onion
° 1 tablespoon fresh chopped parsley
° Salt and pepper to taste

*How to do it:

Rinse the potatoes with cold water; drying and drying. Heat olive oil in a large non-stick skillet over medium heat. Add the potatoes (they should be in one layer). Cook, stirring frequently, for 10 minutes, or until potatoes are brown on all sides.
Adding garlic, covering & minimize heat to low. Cook, stirring occasionally, for 15 to 20 minutes or until potatoes are tender.
