°1 C. tbsp extra virgin olive oil
°1 C. tbsp fresh lime juice
°1 pinch sweet or smoked paprika
°1 pinch dried thyme
°1/4 cup chopped red onion
°2 c baby spinach 
°1 sweet potato, peeled & cubed
°8 potatoes, halved
°2 beef sirloin steaks trimmed of excess fat (1 inch thick each). For extra flavor, rub the meat with smoked paprika and thyme before cooking.
°32 tomatoes
°1/2 yellow bell pepper, diced


To make our best steak recipe with warm sweet potato salad, combine the dressing ingredients (olive oil, lime juice, paprika and thyme) and set aside.
Boil the sweet potato and baby potatoes for 8 to 10 minutes until tender.
Meanwhile, place steaks on oiled barbecue grill over medium/high heat; lower the lid and grill, turning once, until cooked to your liking (6 to 8 minutes for medium rare).  
Let stand 5 minutes on a cutting board; chop against the grain.
Bring barbecue to medium heat; Thread tomatoes onto skewers and grill for a few minutes, turning once, until lightly charred.
To the bowl of dressing, add the sweet potato, drained hot potatoes, yellow pepper, celery, onion and spinach, tossing gently to coat and wilt the spinach. Divide the salad, steaks and tomato skewers on 4 plates.
