Chicken Salad Sandwich


+Chicken and celery salad
°340 g (2 cups) cooked chicken, diced
°2 celery stalks, chopped
°4 green onions, finely chopped
°90 ml (6 tbsp.) mayonnaise
°30 ml (2 tbsp.) lemon juice
°100 g (3 1/2 oz) crumbled feta cheese (optional)
°1 baguette, cut in half horizontally
°40 g (1 1/2 cup) baby spinach
°10 g (1/4 cup) celery leaves
°15 ml (1 tbsp.) olive oil
°4 long sandwich toothpicks


Chicken and celery salad
In a bowl, blend all the ingredients. Salt / pepper.
Top bread base with chicken salad. Spread the spinach, celery leaves and drizzle with oil. Close with the bread. Pierce with four toothpicks and cut into four sections.
