*Ingredients :

°4 cups (1000 mL) broccoli heads cut into bite-size pieces
°1/2 yellow onion chopped
°2 c (500 mL) grated carrots
°4 cups (500ml) vegetable (or chicken) broth
°1 teaspoon of salt
°1/2 teaspoon of pepper
°1/8 teaspoon nutmeg
°3 tablespoons of butter
°1/3 cup (85ml) flour
°1 cup (250 ml) 10% cream
 ° 2 c (500 mL) cheddar cheese

* Methods  :

Adding broccoli, onion, carrot, broth, salt, pepper & nutmeg to slow cooker & cook on LOW for 4 h. In a small cauldron, melt the butter, add the flour and whisk. Taking 1 c liquid from slow cooker also adding very slowly to pot, whisk. Slowly adding cream, whisking. Adding this mixture to slow cooker. Add the cheddar cheese (1 cup at a time). To mix together. Closed slow cooker & simmer for for 30 min. Serve and garnish with a little extra cheese if desired.
