POTATO PANCAKES






*INGREDIENTS :

°350g potatoes
°100g buckwheat flour
°10 cl of milk
°3 eggs
°20 cl liquid fresh cream
°50g butter
°water
°salt pepper

*PREPARATION :

1.
Washing potatoes, peel them & cutting them into pieces. Cook them for 10 minutes in water or steam, then pass them through a potato masher and leave to cool in a salad bowl.

Sifting flour over the bowl. Adding milk also blend well.

Then add the eggs, cream, salt and pepper. Mix until you obtain a fluid and homogeneous paste. If the puree is too thick, add a little milk.
4.
Leave to rest for an hour.
5.
Melt a large piece of butter over low heat in a pan, and pour a small ladle of the preparation. Cook 4 minutes on one side and 2 minutes on the other, then repeat the operation for the following pancakes.
